Do you mean examples that can be shown in schools / universities?
I think you will find a good range of examples in the sample files that are installed with OpticStudio under {Zemax}\Samples. For example, you can find a spectrometer "{Zemax}\Samples\Sequential\Diffractive components\Sample Spectrometer.ZMX", interferometers under {Zemax}\Samples\Sequential\Optical testing ", to list a few. This folder might be interesting too: {Zemax}\Samples\Design Applications.
Otherwise I would recommend looking at our knowledgebase articles as we have examples of LIDAR, HUD, wavefront sensors, pupil expander, and well there is much more so that I think the best is to have a look.
