when using a user defined custom coating in NSC mode, and defining a single angle of incidence, what happens to rays hitting the coating in a different angle from the angle defined in the coating file?

for example:

 TABLE AR99%_0deg@_755_810
ANGL 0
WAVE 0.755 0.01 0.01 0.99 0.99
WAVE 0.810 0.01 0.01 0.99 0.99

what reflection/transmission will have a ray hitting the coating at an angle of 5 deg?

In your case, all AOIs will act the same. 

From the help file Libraries Tab > Coatings Group > Defining Coatings > The TABLE Data Section:

Angles of incidence less than the smallest angle defined will use the smallest angle data. Angles of incidence greater than the largest angle defined will use the largest angle data. Other values are linearly interpolated in cosine of the angle space.

Here is a quote from the help entry on Table. 

“Angles of incidence less than the smallest angle defined will use the smallest angle data. Angles of incidence greater than the largest angle defined will use the largest angle data. Other values are linearly interpolated in cosine of the angle space.” 

That would say that when data is given for a single angle, it is used for all angles.
