During the Load FEA data process, STAR performs numerical fitting of the loaded FEA dataset. Once the fitting is done, does STAR only deal with the fit generated sag profile, not the original FEA dataset anymore?

Yes, that is correct. The original FEA dataset is used only to generate the numerical fit. The fitted data stored in the .ZST file is then used for ray trace and for results displayed in different analyses.

However, STAR still accesses the original FEA dataset for various visualizations. For example,

In the Fit Assessment tool it is used to calculate the difference between the fit and the node values.

In the Alignment Check it is read to display the node locations of the FEA data.

In the System Viewer it is used to display the index as a point cloud (where the points are at the node location).
