User can access the fitting error via the Fit Assessment tool. But is there a way to also access the fitting produced dataset?

Not really. The fit dataset is saved in the default folder \Documents\Zemax\Objects\STOP Files\ with an extension ZST. This file is in binary format and generally unreadable by customers.
